Go choco loco for this healthy banana bread – it tastes divine. Makes a fab breakfast or arvo tea and it is a great way to use ripe bananas that are too soft to eat on their own. Most ingredients are household staples so you cannot go wrong!

 

 

 

 

 

 

INGREDIENTS:

  • 3 eggs
  • 2 ripe bananas
  • ½ cup organic rolled oats
  • 1 cup Greek yogurt
  • ¼ cup honey
  • ½ cup dark chocolate 85%+ chopped
  • ¾ tsp baking soda
  • 2 tsp vanilla extract

HOW:

  • Heat oven to 180°C
  • Mill oats in food processor
  • Place all ingredients except the chocolate in a bowl and mix together. You can use a spoon, I like using my hand to mash up the banana.
  • Use coconut oil to rub on to a rectangular container
  • Pour half the mixture into the bowl
  • Sprinkle half the dark chocolate
  • Pour rest of the mixture
  • Sprinkle the remaining chocolate on top
  • Bake for 25-30 minutes
