Go choco loco for this healthy banana bread – it tastes divine. Makes a fab breakfast or arvo tea and it is a great way to use ripe bananas that are too soft to eat on their own. Most ingredients are household staples so you cannot go wrong!
INGREDIENTS:
- 3 eggs
- 2 ripe bananas
- ½ cup organic rolled oats
- 1 cup Greek yogurt
- ¼ cup honey
- ½ cup dark chocolate 85%+ chopped
- ¾ tsp baking soda
- 2 tsp vanilla extract
HOW:
- Heat oven to 180°C
- Mill oats in food processor
- Place all ingredients except the chocolate in a bowl and mix together. You can use a spoon, I like using my hand to mash up the banana.
- Use coconut oil to rub on to a rectangular container
- Pour half the mixture into the bowl
- Sprinkle half the dark chocolate
- Pour rest of the mixture
- Sprinkle the remaining chocolate on top
- Bake for 25-30 minutes
