I love cranberries (who doesn’t?!) so it was only a matter of time before I made a protein bite recipe with these bad boys and some other of my favourite ingredients. Here is the low down:

Time: 20min

INGREDIENTS:

  • 1 1/2 cup dried cranberries
  • 1 cup chopped almonds
  • ¼ cup organic cocoa nibs
  • 1 TBS milled linseed
  • 50 grams protein powder (I used chocolate for this version, you can use the flavour of your choice)
  • 3 tbs of water approx. (this depends, sometimes this is more or less depending how juicy the fruits are, add them one by one and assess the consistency before you add the next one)
  • Chocolate amaranth

 

HOW:

  • Place all ingredients except water in food processor
  • Mix in a bowl, add the water one tbs at the time as you mix, allow the mixture together (if too dry add more water but be patient) you know it is right when it starts to get a nice shiny colour
  • Roll into balls approx. 45 grams
  • Spread the amaranth on a plate and roll the ball until it is fully covered
  • Refrigerate for a couple of hours or overnight
