I am obsessed with these peanut butter bites, they look great and taste even better. I usually make a batch on the weekend and they last about a week (depending on how many I eat oops!). I take them with me to have after I teach a workout or as a snack.

  • 1 jar organic smooth peanut butter Whole Earth Foods (I recommend this one as the more natural ones have the oil separation and it does not stick together)
  • ½ cup all-bran flakes Kelloggs
  • ½ cup sunflower seeds
  • ½ cup pumpkin seeds
  • ½ cup unsweetened shredded coconut
  • ¼ cup honey
  • 1 handful organic cocoa nibs Naturya
  • 50 grams chocolate protein powder
  • 3 squares dark choc 85% for drizzling Lindt
  • Cashew nuts for topping
  • 2 tbs of water (depending on desired consistency)

  • Warm up the honey and peanut butter until softened and mix together
  • Place all ingredients in a bowl and mix together
  • Take a spoon full of the mixture and roll into balls roughly 30gm
  • Refrigerate for a couple of hours or overnight
  • Melt dark choc and drizzle a dollop on top
  • Decorate with 1 cashew

Ta-da! Pretty and delicious.

  • Rub coconut oil on tray or line with parchment paper
  • Use gloves to avoid sticky hands, alternatively rub a tinny bit of coconut oil on your hands
  • Place mixture in fridge for 20 min before spreading to make it easier (les sticky!)img_FitCrowd Alejandra Alvarez Peanut Butter Bites 2FitCrowd Alejandra Alvarez Peanut Butter Bites 1
